To be fair, the game does a bad job of showing it. It only ever animated the full hookblade. But concept art shows that there is a blade piece, and the hook piece which slides alongside the blade and locks in place when extended.
Ezio's broke in mid combat, so they were flimsy and very poorly designed, and they even maintained that property to modern day. They were very effective stealth weapons, but in actual combat, contrary to what the games show, they sucked. This is why they fell out of favor as combat weapons with the Parisian Brotherhood and British Brotherhood.
